Comforting Winter Beef Stew Recipe

As the winter months set in, there's nothing more comforting than a hearty beef stew to warm you up. This classic dish, rich with tender beef and flavourful vegetables, is the perfect comfort food for chilly evenings.




Ingredients:

  • 1 kg beef chuck, cut into chunks

  • 2 tbsp olive oil

  • 2 large onions, chopped

  • 3 cloves garlic, minced

  • 4 carrots, sliced

  • 3 celery stalks, chopped

  • 4 potatoes, cubed

  • 2 tbsp tomato paste

  • 4 cups beef broth

  • 1 cup red wine

  • 2 bay leaves

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)


Instructions:

  1. Prep the Beef: Season the beef chunks with salt and pepper. In a large pot, heat olive oil over medium-high heat. Brown the beef in batches, ensuring all sides are seared. Remove and set aside.

  2. Sauté Vegetables: In the same pot, add onions and cook until translucent. Add garlic and cook for another minute.

  3. Add Carrots and Celery: Stir in the carrots and celery, cooking for about 5 minutes.

  4. Combine Ingredients: Return the beef to the pot. Add tomato paste and stir to coat. Pour in the beef broth and red wine, then add the potatoes, bay leaves, thyme, and rosemary.

  5. Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 2 to 3 hours, or until the beef is tender and the vegetables are cooked through.

  6. Season and Serve: Adjust seasoning with salt and pepper if needed. Garnish with fresh parsley and serve hot.
